The main ingredients of Salento cuisine, that is predominantly vegetarian, are vegetables, legumes, cereals and olive oil, which are all grown locally and are often organic. It is a healthy diet because it is light and tasty at the same time, thanks to the many herbs that grow here naturally and to the quality of the soil. The food of Apulia and especially of Salento is famous throughout Italy. Home-made pastas, superb cheeses, fresh fish,caught in both seas, excellent cakes and pastries and the many recipes which sometimes have Greek or Middle-Eastern flavours, have earned them this accolade.

The most famous wines are Primitivo, Salice Salentino and Negroamaro, which are already appreciated by wine connoisseurs all over the world. The lesser known wines are currently being discovered and are becoming more popular day by day. There are many vineyards that offer wine tasting.
